“Tortillitas de camarones”, the mythical Cadiz recipe

We explain in detail how to make shrimp omelettes, typical of Cádiz, with the product Camarón Cristal Ferrer.

Tortillitas de camarones (shrimp omelettes ) are a Cadiz dish that is eaten as a tapa throughout the year. It is a dough that does not contain eggs, made with chickpea flour and has its origin in the town of San Fernando (Cádiz).

The shrimp omelettes are usually thin so that they are very crispy and do not trap too much fat from the frying, making them light and tasty. They are made with raw shrimp.

Ingredients (for 3 persons)

Ferrer Cristal Shrimps (seafood) 100g – Wheat flour 100g – Chickpea flour 100g – Chives 10g finely chopped – Fresh parsley: a bunch finely chopped – Very cold water 250ml – Pinch of salt

Difficulty: Easy – Preparation time: 5 min – Cooking time: 10 min – Resting time: 30 min

Recipe

Mix the wheat flour with the chickpea flour in a bowl. Add the parsley, finely chopped chives and fresh shrimp. A trick, to obtain the classic yellow color, is to add a pinch of turmeric to the dough. Add a glass of very cold water to the dough and stir with a whisk. You will have a very light dough. Leave for 30 minutes in the refrigerator.

After half an hour, add a splash more cold water and beat again. In a paella pan, put plenty of EVOO and wait for it to heat up. Then, using a saucepan, add small portions of the batter and wait for it to set. Turn over to brown on both sides.

Drain each tortilla with paper towels and arrange them in the serving dish.

Do not despair, it is logical that the first one does not come out well, but then they will come out without any problem. The same goes for crepes 😉
