It is a dough that does not contain eggs, made with chickpea flour and has its origin in the town of San Fernando (C\u00e1diz).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The shrimp omelettes <strong>are usually thin so that they are very crispy and do not trap too much fat from the frying,<\/strong> making them light and tasty. They are made with raw shrimp.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Ingredients (for 3 persons)<\/strong><\/h5>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/compraonline.fferrer.com\/es\/gamba-cristal-0\" target=\"_blank\" rel=\"noopener\" title=\"\">Ferrer Cristal Shrimps (seafood) 100g<\/a> &#8211; Wheat flour 100g &#8211; Chickpea flour 100g &#8211; Chives 10g finely chopped &#8211; Fresh parsley: a bunch finely chopped &#8211; Very cold water 250ml &#8211; Pinch of salt<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Features<\/strong><\/h5>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Difficulty<\/strong>: Easy &#8211; <strong>Preparation time<\/strong>: 5 min &#8211; <strong>Cooking time<\/strong>: 10 min &#8211; <strong>Resting time:<\/strong> 30 min<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Recipe<\/strong><\/h5>\n\n\n\n<p class=\"wp-block-paragraph\">Mix the wheat flour with the chickpea flour in a bowl. Add the parsley, finely chopped chives and <a href=\"https:\/\/compraonline.fferrer.com\/es\/gamba-cristal-0\" target=\"_blank\" rel=\"noopener\" title=\"\">fresh shrimp<\/a>. A trick, to obtain the classic yellow color, is to add a pinch of turmeric to the dough. Add a glass of very cold water to the dough and stir with a whisk. You will have a very light dough. Leave for 30 minutes in the refrigerator.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After half an hour, add a splash more cold water and beat again. In a paella pan, put plenty of EVOO and wait for it to heat up. Then, using a saucepan, add small portions of the batter and wait for it to set. Turn over to brown on both sides.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drain each tortilla with paper towels and arrange them in the serving dish.<\/strong> <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Do not despair, it is logical that the first one does not come out well, but then they will come out without any problem.
